A friend of mine just requested the recipe for what I made for dinner the other night [ April 9th posting ] but since I hardly ever use a recipe this is the best I can do. It was a very tasty and " healthy" dinner.
"The Meal"... Sauteed Bay Scallops in a Ginger Sauce with Coconut Rice and a Mango mint salad with my "dressing on the fly".
RICE - make how ever much rice you want using Lundberg "sweet brown rice" and then add however much you like of the following...
Fresh pineapple in chunks
Dried coconut flakes are best
Minced salted cashews
SALAD
Torn Bibb lettuce
Endive cut into slivers
Fresh mint leaves
Fresh mango in cubes

MY DRESSING "ON THE FLY"
Peanut oil
Rice vinegar
Mince up some fresh mango + mint
A little salt + white pepper
BAY SCALLOPS
Choose a good quality bottled Asian ginger dressing, saute scallops in a little of the sauce and peanut oil, before serving sprinkle with sesame seeds and fresh lime.
I cook this way all the time which drives Kim nuts as she is a recipe person. My approach, choose great ingredients and let're rip!

Oh, something else I did was use smaller plates, which worked out great. Simple change, but it really helped me be much more mindful about the portions I served.
